  1. The Arrest

The cocktails created in Liverpool Street, inspired by a fictional character named Tom Rakewell,whose life was depicted in a series of paintings by 18th Century English artist William Hogarth.

This cocktail, named ‘The Arrest’, is based on one of the paintings, where Rakewell has been painted as evading  a arrest while on his way to a party at St James’s Palace.

The ingredients are purposely bittersweet, combining a sweet syrup with chocolate mole bitters, rum and tequila.

Ingredients:

  • 20ml Patron silver Tequila
  • 30ml East London Liquor Company Demerara Rum
  • 10ml salted simple syrup (make by mixing 8g of fine sea salt with 700ml of simple syrup)
  • Five drops of Bittermens Xocolatl mole bitters

Method:

  1. Pour all ingredients into a rocks glass that’s been rimmed with coffee, salt, pepper and sugar.
  2. To make the blend of ingredients for the rim, mix 1g coffee with 0.5g salt, 4g sugar and 0.5g fresh black pepper.
  3. Then, stir the drink directly into the glass with a single large ice cube inside.

Ingredients

  • 1½ oz. or 50 ml reposado tequila
  • ½ oz. or 20 ml crème de cassis
  • ½ oz. or 25 ml fresh lime juice
  • 2–3 oz. or 1oo ml ginger beer

Method

  • Combine all ingredients, except ginger beer, to a shaker with ice and shake.
  • Fine-strain into Collins glass with fresh ice, top with ginger beer and garnish.

Ingredient

  • 1.5 oz Sombra Mezcal
  • 1 oz grapefruit juice
  • 0.5 oz lime juice
  • 0.5 oz rosemary simple syrup
  • Salt (if desired)

Directions

  • Combine Sombra, grapefruit juice, lime juice, and rosemary syrup in a shaker with ice, and shake vigorously.
  • Salt the rim of a rocks glass. Strain cocktail over ice in rocks glass.

Garnish with grapefruit wedge and rosemary sprig.

4.Chai Mezcalita

Ingredient

  • Salt, pinch
  • 1 oz lime juice
  • .75 oz Chai Syrup
  • 1.25 oz Banhez Mezcal
  • .75 oz Libelula Joven Tequila (or silver tequila of choice)
  • 2 whole star anise for garnish

Directions

  • Add all measured ingredients.
  • Fill shaker with ice. Shake very well.
  • Fill rocks glass with ice and strain into glass.
  • Garnish with anise to serve.

5. Ramble On

 

This tequila cocktail is assembled with a tart layer of rhubarb, raspberry and citrus to brighten up the rich flavors of aged agave and apple brandy.

Ingredients

1 oz. reposado tequila
½ oz. aged apple brandy (Belanger uses Clear Creek 8-year)
½ oz. Zucca Rabarbaro
½ oz. Giffard rhubarb liqueur
¾ oz. fresh lime juice
½ oz. raspberry syrup

Direction:

  • Add all measured ingredients.
  • Fill shaker with ice. Shake very well.
  • Fill a Coupe with ice and strain the mix into the glass.
  • Garnish with grapefruit twist to serve.

Raspberry Syrup: Combine 1 quart of raspberries and 3 cups water in a saucepan, bring to boil for about 8 minutes. Allow to cool for about 10 minutes, then strain through a chinois. Combine the raspberry water with equal parts superfine sugar by weight and stir until the sugar dissolves. Transfer to a clean container, label and refrigerate for up to 2 weeks
